At our BBQ partites this summer, the smell of garlic as it caramelizes on a searing churrasco make our mouths water. But what’s a steak or hot dog without something extra special on the side? We know that the real showstoppers are side dishes. They’re are filling, travel well, complement any protein, and have a flavor so addictive that they can stand alone, too. And as an added bonus, many sides can be made hours in advance–giving you time to actually enjoy yourself and spend time with your guests instead of being tied to the grill!

Keep it classic with salty tostones or elotes covered in cotija cheese and chili powder. If you want to take advantage of summer’s harvest, we suggest simple sautéed asparagus wrapped in Spanish Serrano ham or opting for a bacon, avocado, and corn salad. Many home cooks are intimidated by the idea of making their own flour tortillas. Getting themasa to the right consistency, and rolling out a perfectly round tortilla can be tedious, and takes practice. Don’t give up! Use a rolling pin that is the diameter of a broom handle, thin and straight. Also, make sure you press a divot into the center of each dough patty before you roll it out. This patty is known as a textal in Northern Mexico. The thin center and thicker edges of thetextal will help you roll out a more round tortilla.
